Besides having produced a prolific number of paintings, Sallie Ellington Middleton has illustrated three books. She is, herself, the subject of a biography by Celestine Sibley, The Magical Realm of Sallie Middleton, in which her paintings are illustrated. Her work was accepted for the article on watercolor in American Artist Magazine, and has been used extensively on the covers and in articles in N.C. Wildlife magazine.

Sallie Middleton paintings hang in private collections across the United States, in the Gibbes Art Gallery (Charleston, S.C.), Magnolia Gardens (Charleston, SC), and the Harry Dalton Collection in the Mint Museum (Charlotte, N.C.).
